In Tokyo, people make reservations months in advance and pay up to $300 to visit a ten-seat restaurant run by 85-year-old Jiro Ono. Despite the restaurant’s humble surroundings (a subway station), Ono is the only sushi chef to receive a three-star rating in the Michelin dining guide.
